I first had this coffee at Artificer in Surry Hills, so when I spotted it on the MCM offerings list I was pretty keen to jump on it. Like some of our other coffees, this one will be joining our yearly rotation at Recess.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp class=\"isSelectedEnd\"\u003e\u003cspan\u003eThis coffee comes from a group of small producers around China Alta, in Tolima, Colombia. The farms are small, family-run operations, with producers growing coffee high up in the mountains of the region.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eIt’s bright, juicy and floral, with a syrupy mouthfeel and a really lovely sweetness. We’ve roasted this one for filter, but it’s also pouring a bloody good flatty!\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003ePretty much my ideal type of coffee. Only downside? It is typical to see large rain clouds rolling in over the mountains, covering the farm for periods of the day. \u003c\/p\u003e\n\u003cp\u003eThese farms are a family affair. His wife Bellanid, son-in-law Diego Campos (Colombian Barista Champion), and daughter Derlin are all involved in coffee production here. \u003c\/p\u003e\n\u003cp\u003eElias has two primary farms, Finca Tamana in Pital and Finca Recuerdo in Acevedo. They are planted with many different heirloom varieties, including some with African lineage. On both farms, Elias utilizes dry fermentation for roughly 14-16 hours, followed by several washes with fresh water. For several of the mill's early years, the Vargas drying beds were full of only Naturals. This one has a really nice herbal and fruity thing going on, with loads of sweetness, tropical acidity and a creamy, velvety body. It’s nice having that connection to the people behind the coffee and the farm, and we’re always keen to support good people doing good things.\u003c\/p\u003e\n\u003cp\u003eWe’re getting strawberry, lime, chocolate and fig, with a cup that’s complex and a little boozy.
